Calling all Pilots! Calling all Pilots! We are about to set out on a fantastic imagination journey. The Kids had so much fun with our New Ace Flyer! It began conversations based on places that we have seen and places we would love to go. When your child is playing the sky is the limit.. Literally! These are my three, four, and five year olds discussing things like the Northern lights! I was in awe of the children's factual knowledge about the borealis, and gas particles colliding.

Children's nutrition is always an important topic for me, This is one of the main reasons I chose to enroll in the Maryland USDA program. Sunshine Kids provides two home made, nutritious and wholesome meals (breakfast and lunch) and a healthy snack at no extra cost. Almost all meals are made from scratch in order to avoid processed foods. Virtually all our vegetables, fruits, meats and more are organic or home grown.
Today's menu we are offering Home made pizzas that the children will make themselves, they are offered a variety of vegetables, meats, and toppings, the children are encouraged to try new things. However today I was asked a really important question about allergies or personal preference in children's diets such as being a vegan or vegetarian. I love when parents take an active roll in their child's nutrition and take the time to make sure that their child is not going to have to eat "veggie patties" every day. There are so many things to offer that are good healthy foods to children in this category. It is almost shameful that more childcare facilities lack the imagination to provide nutritious alternatives. I started by asking the mom what all the allergies or dietary restrictions were for her daughter and it turns out that she was just diagnosed with a slight Celiac allergy, however the parents have always chosen to be vegetarian and raise their daughter as such. I think the mom thought I would just pull the standard peanut butter and jelly on rice bread alternative. Because immediately after telling her that in her case I would offer her daughter the option to make her own "Portobello Pizza" and encourage my "boys" to try it she asked me for the recipe and any other kid friendly "vegetarian gluten free meals" I may have up my sleeve. So Today I thought I would share the recipe for "Portobello Pizzas" Portobello Pizzas 4 large portobello mushrooms 1 TBS olive oil plus more for brushing salt pepper 1 5 ounce package of baby spinach 1/2 cup marinara sauce 8 tsp gluten free bread crumbs 1 cup shredded mozzarella (may sub with dairy free if needed) Fresh basil for topping Preheat oven to 400* Remove mushroom stems and scrape out the inside. brush with olive oil and sprinkle with a little salt and pepper arrange gill side down on foil lined baking sheet and bake for 12 minutes remove from oven, flip and pat dry. cook spinach in olive oil toss until leaves are wilted and liquid has evaporated add marinara sauce stir to combine. fill each mushroom with about 1 TBS of marinara filling sprinkle with crumbs and cheese. Bake until cheese is melted and bubbly top with fresh basil. Who's There?
It's always fun when kids get a little silly! Today our morning started out with a big case of the "sillies" The boys were thrilled to tell me all about their weekend adventures, and as an added bonus I was treated to some of the most silliest knock knock jokes! So as a little treat for you I give you "The Knock Knock Jokes" For added humor knock three times stomp your foot, ring the door bell "ding dong" get the dogs to bark then tell it! Knock, knock. Who’s there? Canoe! Canoe who? Canoe come out and play with me today? Knock, knock. Who’s there? Who! Who who? That’s what an owl says! Knock, knock. Who’s there? Lettuce. Lettuce who? Lettuce in, it’s cold out here. Knock, knock. Who’s there? Wooden shoe. Wooden shoe who? Wooden shoe like to hear another joke? Knock, knock. Who’s there? A broken pencil. A broken pencil who. Who’s there? Avenue. Avenue who? Avenue knocked on this door before? What a Supercalifradulisticexpialidosious Spring Break! We had so much fun that I didn’t even have a chance to tell you about our adventures! This was an awesome time for my school agers who didn’t have to go to school for a whole week and a day! The younger kiddos were excited to have them here to play with us as well! We kicked off our spring break by talking about spring and things that change in the spring time; we also talked about how the birds were out a lot more now. We went on a nature hike around our fantastic trails and gathered pinecones, then set up a bird feeding station and created bird feeders with our pinecones and birdseed. Then we observed over the week to see how many birds came to visit our feeders and boy were we lucky! We even had a few visits from some squirrels! We had a field trip to bland air park and had a fantastic day playing and flying kites! We also talked a little about flowers blooming and created canvas prints of cherry blossom trees. We continued our spring adventure by painting flower pots and planting some flowers of our own, as well as painted Easter eggs! We ended our week with a fantastic Hunt for eggs and found so many of our fabulous designs as well as some surprise eggs! We had a fantastic week making new friends and talking about spring! We are all looking forward to Summer Camp!
